Describe the bug
Wrong default preset in SVT-AV1[-PSY]

Expected behavior
Should be preset 8 by default, set to 10 instead.
From SVT-AV1 and SVT-AV1-PSY:
config_ptr->enc_mode = ENC_M8;

How to reproduce the issue

1. Keep default preset, which says 10.
2. Actual preset used == 8

Provide information

Happens in version 2.48

Additional context
Also, I have a suggestion, maybe you can make the Default: <option_name> a separate option in the list, and a separate explicit option <option_name>, so that it's possible to save consistent option values without worrying about defaults changing if your target option happens to be the current default?
